Hey, I’m Nate Collier — and welcome to The Flavour Journey!
I’m a self-taught cook with a serious love for all things fire and flavor. From backyard barbecues to cast iron breakfasts, I’ve spent years learning through trial, error, and plenty of smoke.
I grew up surrounded by people who loved to cook outdoors — the kind of folks who believed a good meal could fix just about anything. The smell of the grill, the sound of laughter, and everyone gathered around the table… that’s what hooked me.
Here in Texas, you get obsessed with BBQ at a young age. But my obsession with food became serious in my early 20s. Whenever I had a good brisket or a great burger all I could think about was I need to learn how to do this myself. And now in my late 30s I have spent more than 10 years experimenting with food and cooking for the people I love.
Now I just love to experiment with charcoal grills, flat tops, cast iron pans, ovens, and fryers — trying new recipes and perfecting my old ones. Cooking everything from simple Tuesday night chicken thighs for my family to full backyard spreads for 20+ people.
I’ve ruined briskets, overcooked steaks, burned more burgers than I care to admit. But every mistake taught me something — and that’s where this site comes from. I share recipes here that anyone can cook — and I’ll show you how to make great food at home without overcomplicating it.
Every recipe here is tested, cooked more than once, and served to real people — not just photographed and forgotten.
Here I share the best of what I’ve learned — my go-to techniques, gear I trust, and recipes that anyone can make (and actually enjoy making). I always try to build bold flavor with simple ingredients and solid technique. My goal is to help you cook with more confidence every time you fire up the heat.
